Dogfish Head Oak Aged Noble Rot | Beer Geek Nation Craft Beer Reviews

This saison-esque science project gets complexity and fermentable sugars from the addition of two unique white wine grapes, sourced with our friends at Alexandria Nicole Cellars in Prosser, Washington. The first addition is the must of viognier grapes that have been infected with a benevolent fungus called botrytis. This ’noble rot’ reduces the water content in the grapes while magnifying their sweetness and complexity. The second is a pinot gris intensified by a process called ’dropping fruit,’ where large clusters of grapes are clipped to amplify the quality and distinction of those left behind. We then aged Noble Rot in one of our oak tanks for an entire year, making for a hazy ale that has a spicy white wine body and a dry, tart finish. Read More »

More than 1,500 loyal fans of the brewery and band suggested an ingredient idea and the Dead-inspired story behind it. Our favorite was granola, from California Dead Head and craft beer lover Thomas Butler. “The components of granola – honey, toasted grains, oats and fruit – offer a lot from a beer perspective,” says Thomas, a chemist by day, homebrewer by night. “The idea is to have a bold pale ale that highlights the oats and honey with a nice ‘dank’ hop selection.” American Beauty is brewed with all-American malts and hops, granola and little bit of soul. Beer Geek Nation presents San Diego Beer Vlog: Dogfish Head Positive Contact Video Beer Review

Positive Contact is a cider-beer-hybrid veeeeeery loosely based on a Belgian-style Wit beer brewed with a bunch of unconventional ingredients for the style. Typically, Wits are brewed using bitter orange peel and coriander, but we went a different route. Inspired by one of Sams trips to Eataly in New York City, Sam and Ben brewed this beer with organic Fuji apple cider, fresh organic cilantro, and dried cayenne pepper. The cider was pressed in house from 200 lbs of apples with our very own fruit press. These wonderful fresh ingredients were delivered to usa couple of days before the brew by Sams friend Zeke of Washingtons Green Grocer. The grain bill for this brew was about 50/50 wheat and barley but a small portion of Anson Mills Slow-Roasted Farro was also added. Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means “holy tree” and it’s wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation. Read More »
