Although we enjoyed aging Batch #1 in used La Folie barrels from New Belgium Brewery, one of which was the renowned PH1 barrel, Batch #2 is something completely different. After a trip to Belgium in 2006, Vinnie successfully tried his hand at spontaneous fermentation using traditional, and not so traditional, Lambic methods. Out of respect for our Belgian brewing friends, we call this style “Sonambic”, a portmanteau between Sonoma and Lambic. We stole this term from our friend Brian Hunt at Moonlight, our local farmhouse brewery. In 2007, we executed a second spontaneous fermentation, making yet another batch of Sonambic. This year, we blended those two batches to create our second bottling of Beatification which we are very excited about! The Bruery Windowsill (Rhubarb Pie Sour?) | Beer Geek Nation Craft Beer Reviews

Evan Kleiman, host of KCRW’s Good Food, was inspired to collaborate with Patrick Rue and The Bruery after enjoying a homemade Rhubarb Raspberry Pie. The rhubarb’s fruity sourness tempered with the sweetness of the fresh raspberries and the wheat crust, begged to be bottled up in the form of a bubbly beer. Keeping the original pie recipe in mind, specialty grains were chosen to mimic the crust, and rhubarb and raspberries were used in varying stages of the brewing and fermentation process. Ichigo Highway is a collaborative beer that we created with Hangar 24 Brewing from Redlands, CA. The base style is a sessionable sour red ale that we aged in oak barrels along with a whopping amount of strawberries, most of which were picked from the fields besides Hangar 24’s brewery. Aged for approximately 8 months, this beer has developed a pleasant funk and a delightful acidity that is balanced by the intensely sweet aroma and flavor of the strawberries as well as a unique dryness achieved by using a sake yeast along with our house strain along with souring bacteria. New Belgium Brewing and The Lost Abbey brewery from San Marcos, California have a shared passion for a variety of things, not the least of which is the wild Belgian yeast brettanomyces. So they decided to join forces and collaborate. Lost Abbey Collaboration is brewed simply with pale malts accompanied by Target, Centennial and Sorachi hops for a hint of citrus. Focusing on their mutual respect for the ingredient, the spotlight shines on the brettanomyces, where a full brett fermentation offers bold pineapple overtones and funky, sour edge. A long time ago (well, 2004) in a Pizza Port not so far away (Solana Beach, CA), Tomme Arthur and New Belgium’s Peter Bouckaert brewed an all Brettanomyces beer they called Mo’ Betta Bretta. When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the the dark malts blended nicely with the furit character that developed in blending.
